Meet Erin Leeds, Founder of Garden Butcher

What inspired you to start Garden Butcher?
A few things, really. Most obviously, I wanted a place in Boca Raton where I could get delicious food I trusted for my entire family. When I moved here in 2018, I struggled to find it—and as a chef, I had always daydreamed about opening something like this. I’ve also always had an entrepreneurial drive to build something meaningful that could serve my community and make my family proud.

What was missing in the food space that you felt compelled to create?
Truly clean, ingredient-driven food—seed oil-free, refined sugar-free, and made with uncompromising quality.

Why the name Garden Butcher? What does it mean to you?
The name came to me about 15 years ago. I loved how playful and edgy it felt—a fun blend of two things that normally don’t go together, but somehow work perfectly in our world.

How has your personal wellness journey shaped the brand?
Movement and fitness have always been big parts of my life—I played Division 1 softball and still love working out. But in high school and college, my relationship with food wasn’t always healthy. After becoming a mom, I realized that what I was eating deeply affected how I felt. I began creating cleaner versions of my favorite foods, focusing on quality ingredients rather than restriction. I’ve been eating this way for 8+ years now and have never felt better. That experience is the heartbeat of Garden Butcher.

How has your personal wellness journey shaped the brand?

What makes Garden Butcher different from other clean-eating concepts?
We don’t cut corners—ever. From the tortillas in our wraps to the mylks in our smoothies, every item is thoughtfully sourced and made without seed oils, fillers, or shortcuts. It's a lot more work, but it’s worth it.

Life Outside the Kitchen

As a mom of four, how do you make healthy eating approachable at home?
Preparation is everything. I always keep simple, nourishing options on hand—some from Garden Butcher, some homemade. It doesn’t have to be complicated to be healthy.

What’s one non-negotiable in your household?
Seed oils and refined sugars. I can’t control every meal outside our home, but at home, we skip them entirely.

What’s your go-to meal when life gets hectic?
For my kids, “honey chicken”—a five-minute favorite. For me, it’s gluten-free pasta and tomato sauce. Quick, easy, and comforting.

Clean Ingredients, Real Impact

Why is being seed oil-free such a big priority?
Many seed oils are inflammatory and harmful. There are easier and more profitable ways to operate—but that’s not the kind of business I want to run. Integrity matters.

What’s one ingredient you’ll never allow in your kitchen?
Canola oil.

If you had to sum up your food philosophy in three words?
Simple. Whole. Balanced.

What kind of impact do you hope Garden Butcher makes?
I hope we’ve already made one by proving that clean food can be both accessible and crave-worthy. My dream is to have a Garden Butcher in every community. We’re also partnering with Florida Food Rescue to make sure we’re giving back in meaningful ways to families and people in need in our community.
